How can I look at all the data being synchronized before I sync it?

You will see a confirmation window by default, but to set this option explicitly, do the following;

Open the Intellisync client on your desktop, then click the Set Up button.
On the Configuration Settings page that opens, click Configure Applications to open the Configuration dialog box.
Select the check box next to the application you want to sync, then click the Advanced button to open the Advanced Settings dialog box.
Click the Confirmation tab, then select both the options, Confirm Record Deletions and Confirm Record Changes and Additions. Click OK, then OK again to dismiss the Configuration dialog box.
On the Configuration Settings dialog box, click Save.
On the Main Intellisync window, click Sync.
